Artichoke Dip

All I have to say about this recipe is YUM! Everytime I make it to take to a party I always hope there will be some left over, but there never is!

INGREDIENTS:

1 1/2 cups SHREDDED parmesan cheese (get the good stuff - not the powdered stuff in the can)
1 cup mayo
1 can water packed artichoke hearts ,drained & chopped
2 cloves minced garlic
4 green onions, chopped
Optional: crab or jalepenos

Mix all ingredients and put in a 7x12'' baking dish. Bake at 350 degrees for 30 minutes.

Serve with sturdy crackers or thin slices of french bread.

Lemon Bars

I dare you to eat just one!

INGREDIENTS:

1 cup flour
1/2 cup butter, softened
1/4 cup powdered sugar
2 eggs
1 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons grated lemon peel (optional)
2 Tablespoons lemon juice

DIRECTIONS:

Mix flour, powdered sugar & butter. Press into an ungreased 8x8x2'' pan. Bake 20 minutes at 350 degrees.

Beat remaining ingredients until lite & fluffy (3 minutes). Pour over hot crust and bake an additional 25 minutes. Let cool. Sprinkle top with powdered sugar. Cut into squares & serve.

I usually double the recipe and use a 9x13'' pan.

Tortellini Soup

This is a hearty, delicious soup! Great served with cruncy garlic bread and ceasar salad!

INGREDIENTS:

1 cup coarsley chopped onion
1 lb. Italian sausage
2 garlic cloves, sliced
5 cups beef broth ( 3 cans)
1/2 cup water
1/2 cup dry red wine
2 cups canned diced tomatoes (1 large can)
1 cup thinly sliced carrots
1/2 teaspoon basil
1/2 teaspoon oregano
8 oz. tomatoe sauce
1 1/2 cups sliced zucchini
8 oz. cheese tortellini
3 tablespoons parsley flakes
grated parmesan cheese

DIRECTIONS:

Brown sausage, remove & drain leaving 1 tablespoon of the drippings in the pan. Saute garlic & onions until tender. Add beef broth, water, wine, tomatoes, carrots, basil, oregano, tomatoe sauce & sausage, bring to a boil, reduce heat. Simmer undovered for 30 minutes. Stir in zucchini, tortellini & parsley. Cover, simmer until tortellini are tender.

Great served with parmesan cheese sprinkled over the top. Accompany with cruncy garlic bread and caesar salad.

Taco Soup

INGREDIENTS:

1 lb. ground beef
1 onion, chopped
1 cup green pepper, chopped
2 large cans kidney beans
2 can corn
2 can chopped tomatoes
1 cup mild salsa
1 pkg. taco seasoning

OPTIONAL TOPPINGS: corn chips fresh chopped tomatoes, grated cheddar cheese, sliced olives, salsa, sour cream and chopped lettuce.

DIRECTIONS:

Brown hamburger and onion; drain off fat. Add remaining ingredients, simmer until heated through.

Serve with desired optional toppings.
