An excellent book that traces irrigation and agriculture from the prehistoric Hohokam to the 1960s is "Making Water Flow Uphill:The History of Agriculture in Mesa, Arizona" by Jared Smith of the Mesa Historical Society. It is a well written source of information on the citrus groves and irrigation canals of Mesa and Lehi.
