French Onion Soup

ONION SOUP
Saute' in 3 Tbs BUTTER til golden brown:
2-3 cups thinly sliced ONION
Stir in:
3 Tbs FLOUR
Add & simmer 15 min:
5 cups BEEF STOCK (or 5 cups water & 7-8 Beef Boullion cubes or however many you need to make the flavor strong enough)
Season soup with:
1 tsp WORCESTERSHIRE SAUCE & S&P
Pour soup into oven-proof bowls. Place on top of soup:
BREAD CROUTONS (or cubed toast)
1 cup JACK CHEESE
1 cup SWISS CHEESE (I use whatever cheese I happen to have)
Broil til cheese is melted & brown

BLEU BLEU? OUI OUI!

BLEU CHEESE DRESSING

Stir together & refrigerate:
3/4 c MAYO (*not lo- or fat-free)
3/4 c Sour Cream
4 tsp WORCESTERSHIRE SC
dash of PEPPER
1/2-1 c BLEU CHEESE (crumbled)

*dressing gets watery when using these

Chile-Cheese Eggs

CHILE-CHEESE EGGS

Beat the following & pour into a preheated fry pan (with melted butter) to make into an omelet:
3 EGGS
1/3 C FLOUR
1/4 tsp SALT
6 oz EVAP MILK

Add:
1C CHEDDAR, shredded (8 oz)
1C JACK CHEESE, shredded (8 oz)
2 oz GREEN CHILES

Fold omelet in half, cover til cheese melts.

Heat & pour over top:
8 oz SALSA

This got raves from my Mother-In-Law, so you know it MUST be good!
