22 Minute Chocolate Cake
Cake Ingredients:
2 cups sugar
1 1/2 teaspoons baking soda
2 cups flour
1 teaspoon vanilla
1 cup water
2 eggs
3 1/2 teaspoons cocoa
1/2 cup shortening
1 stick margarine
1 cup buttermilk
Blend sugar and four in mixing bowl. Put water, cocoa, margarine and shortening in a sauce pan and heat until melted. Mix buttermilk (or 1 teaspoon vinegar and I cup of milk), the baking soda, vanilla and the eggs together. Mix all ingredients together. Bake at 400 degrees for 22-25 minutes.
Frosting Ingredients
1/3 cup milk
1 box powdered sugar
1 stick margarine
1 teaspoon vanilla
3 1/2teaspoons cocoa
1 1/2 cups chopped pecans
While the cake is baking, and using the same saucepan, mix milk, margarine, and cocoa and heat until melted. Add the remaining ingredients and mix well. Pour over cake while still warm. Serve warm or cold.
