Cheesy Ham-And-Potato Casserole (Yield 6 servings)
Ingredients:
2 tablespoons chopped onion
¼ cup butter or margarine
¼ cup all-purpose flour
1 teaspoon salt
½ teaspoon dry mustard
Dash of pepper
1 ½ cups milk
2 cups (8 ounces) shredded Cheddar cheese, divided
2 cups cubed cooked ham
6 cups cubed cooked potatoes

Saute’ onion in butter in a large saucepan until tender. Add flour and seasonings, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add milk; cook over medium heat, stirring constantly, until thickened and bubbly. Add 1 ½ cups cheese, stiring until cheese melts. Add ham and potatoes, tossing gently. Spoon into a greased 2-quart shallow baking dish. Bake, uncovered, at 350 degrees for 25 minutes. Sprinkle with remaining ½ cup cheese; bake an additional 5 minutes.
Great with fresh steamed broccoli!
