New Chapter in Local Business

Cabot's Coffee House, located in the Mayfair/King Sooper's Plaza has recently entered a new and possibly final chapter of ownership. As many of the residents know, Cabot's has had a varied history of owners over the last ten year's. Starting with Bill and Bruce Prather, the entreprenuers who built the store from the bare walls and established a community gathering place, Coffee House and Sandwich Shop all rolled into one store.
Cabot's was named after Lord Cabot who was the first importer of teas and coffees to the Colonies during the revolution. Bill & Bruce liked the historical significance although many of the customers assumed that their last name was Cabot and refereed to them as "The Cabot Brother's".
Three different owner's followed over the next ten year's including a French couple, Ray Robles (now
running Finster's Brother's Bagels on Colfax) and Adam & Sarah Howell. All of these owner's had contributions and successes at Cabot's as well as compelling reasons to move on.
In the summer of 1999, Bill Prather was actively looking for a new owner for Cabot's when he ran into Leslie Taylor, Old South Gaylord's Festival Event Coordinator. She had handled the festival for the last four year's and had brought the festival into a new level of success and class. Two weeks and two day's after that chance meeting, Leslie Taylor became the fifth owner in ten year's. ("The last owner" she is quick to tell her customer's.)
Leslie made small changes at Cabot's that brought in warmth and comfort like colorful cushions on all the chairs; beautiful, healthy plants; minor changes to the menu and last year she had a small stage built in the front corner of the store. Leslie made huge changes to her personal life by ending a professional performance career as an entertainer/musician and taking on the grueling tasks of running a seven-day-a-week coffee house. These changes have been a joy for Leslie and after one year and eight months of ownership, she has no
regrets.
"Cabot's and the wonderful customer's have restored me." The people of Mayfair, Park Hill & surrounding areas have restored her faith in man-kind. After spending three to five nights a week performing in bars and restaurants continuously for almost four years, almost anyone would have a jaded outlook on life. Leslie has performed in mountain ski resorts, mountain bars and restaurants, Elks Lodges, Eagle's Lodges. She has performed at The Broadmoor, the Govener's Mansion and The Brighton Bar. Musicians learn to go where the jobs are and shape each performance to that
establishment.
Well, now she has only one sweet stage to be concerned with, the one at Cabot's Coffee House. Starting in March, Cabot's will be featuring many different musicians performing live on the stage Friday, Saturday and Sunday. Sunday night will be an "Open Mic/Open Stage" hosted by either Leslie or one of her musician friends. Poetry and music will be showcased on Sunday's from 7:00 p.m. to 10:00 p.m. Additional information about the performer's will be available at Cabot's soon and Leslie is quick to assure all residents that only good, folk, jazz, blues and original music is allowed and NEVER will the music be loud or troublesome.
Leslie would like to expand the music to maybe five night a week including a "Coffee Karoeke" night in the near future as well as other special events. Tracy Edwards, one of Denver?’s best female blues guitarists, is playing every Thursday night. Stop in for some family entertainment.
