Ryan's Favorite Chicken

Chicken fingers are my son's absolute favorite (it's the only thing he ever orders when we go out to eat) so I came up with this one since he prefers restaurant style.

Amounts are approx. since this is my own concoction.

8 chicken tenders
1 egg
Coating:
1 cup flour
1 tbsp. onion powder
1 tbsp. garlic powder
1 tsp. black pepper
salt to taste
(you can add what ever else strikes your fancy)

Beat egg. Combine all other ingredients onto wax paper. Dip chicken in egg then coat with flour mixture, dip in egg again and then once again in flour.

Unfortunately these have to be fried so:
Pour about 1'' canola oil in a frying pan. Heat till hot, fry chicken tenders till golden brown on both sides. Drain on paper toweling.

Quick and Easy Southwest Chicken

While in need of a quick way to make chicken breasts I came up with this one I think you'll all like. It's also low fat, low calorie.

You will need:
4 boneless, skinless chicken breasts
8 1/8''-1/4'' slices of Monterey Jack cheese from a l lb. block. (you can use a low fat variety)
Wyler's Shakers - Southwest Chicken and Herb. (you can find this by the boullion in the store)

Wash chicken and dry well. Sprinkle both sides generously with the Wyler's seasoning. Refrigerate for about 1/2 hour (this step is not necessary but will give the flavors a chance to work into the chicken). Broil on low till done turning once during cooking, being careful not to over cook them. Remove from broiler and place 2 slices of cheese on each breast and put back in broiler just long enough to melt the cheese. Serve with my salsa recipe in this RDA Recipe Exchange. Sooo good.

Easy Tri-Tip Roast (In 30 min!)

Get BBQ grill coals hot.

Combine following to make a rub:
1 tsp GARLIC POWDER
1 tsp ONION POWDER
2 tsp KOSHER SALT
1 tsp GROUND PEPPER

Rub above all over:
1 1/2 - 2 # TRI-TIP STEAK/ROAST

Sear both sides of meat over hot coals. Then, fat-side up and using indirect heat, cook for 20-30 min or until done:
med rare: 150 degr on thermometer
medium: 160 degr on thermometer

Pork Roast Rub

Combine:
2 tsp GARLIC POWDER
2 tsp CHILI POWDER
1/2 tsp GROUND PEPPER
1 tsp KOSHER SALT (or 1/2 tsp reg salt)

Rub:
1 1/2 - 2 lb BONELESS PORK ROAST
with:
OIL and the combined seasonings

Let roast sit for 30 min.

Place roast on rack w/drip pan and bake 350 degree oven for approx 1 hour or until meat reaches an internal temp of 160 degrees. Remove from oven, cover w/foil and let sit for 10-15 min until internal temp is 170 degr.

The meat comes out very juicy, moist and flavorful.
