Green Chile Rollups (Pinwheels)

From a friend (Terri Gore) in my old neighborhood:
8 oz cream cheese
2 T sour cream
2 T mayonnaise
2 T black olives, diced
4 oz green chile, diced
1 clove garlic, minced (or powder)
6 flour tortilla shells
Mix top 6 ingredients in bowl. Spread thin over 6 tortillas, not spreading toward finish of one end. One heaping tablespoon per shell. After rolling, cut into 1-1/4 inch baby rollups.
Variation: Cream cheese diluted with a little milk. Use thin slices of ham and green onion, lay on shell and roll up.

From another friend (Joan Ramski) in my old neighborhood:
round chips (like Tostitos Crispy Rounds)
refried beans
diced green chile
grated cheese
Layer beans, green chile and grated cheese on chips; put under broiler or in microwave till cheese melts. May add small dollop of sour cream, if desired.

Homemade Orange Julius

I made these for my kids all the time when they were young.
1/2 of a 6-oz can of frozen orange juice concentrate
1/2 cup milk
1/2 cup water
1/4 cup sugar
1/2 tsp vanilla
5 or 6 ice cubes
1 tsp. powdered protein for froth (optional)
Blend in blender and enjoy! Double everything if you want to make more.

Sour Cream Coffee Cake

This is my son's favorite Saturday morning breakfast surprise. It's from Bisquick (with some modifications).
1-1/2 cups Bisquick baking mix
1/2 cup sugar
2 T margarine or butter, softened
1 egg
3/4 cup dairy sour cream or unflavored yogurt
1 tsp vanilla
Streusel (below)
Heat oven to 350 degrees. Grease (or spray w/Pam) square pan, 8x8x2 inches (or pie pan). Mix all ingredients except Streusel; beat vigorously 1 minute. Spread in pan. Sprinkle with Streusel. Bake until wooden pick inserted in center comes out clean, about 35 minutes. Cool 10 minutes before cutting and serving.
Streusel: Mix 1/3 cup Bisquick baking mix, 3 T brown sugar, 1/2 tsp cinnamon and 2 T firm (stick) margarine or butter until crumbly.
