Hours of Operation
I suspect he will eventually be open later, perhaps sooner than he planned. I think he is going to work the kinks out and build things up and then expand, the converse of some other restaurants. He is the primary cook and he will have to teach people his food. His official hours are till 3PM, however today he was open till 5:00. He is looking at hiring more staff.
